Sparkling Blanc de Noirs, Estate Grown, Dry Creek Valley, 2019


Vintage Description:

2019 was a beautiful vintage here in Dry Creek Valley. We had a very wet winter which pushed out budbreak and bloom by about two weeks. The growing season was warm but without any heat spikes, making it ideal for these sparkling grapes. 

Winemaking Notes:

We harvested these by hand at 4 am, the coldest bit of the night. The grapes went whole cluster into the press to get minimal contact with the skins, stems and seeds. We pressed very gently, making a cuvee cut at 1.2 bar. After 24 hours of settling at very cold temperatures, we racked the juice to a fermentation tank where is fermented nice and cold for almost 5 weeks. From there, the wine was put to bottle with a little bit more yeast and a little bit of sugar and fermented Methode Champenois (in each individual bottle). This is the traditional method of making champagne in France that goes back centuries. After 22 months on lees in bottle, we disgorged with just a small addition of dosage to balance out the bright acidity of the vintage. We added 3 g/L which is in the category of Extra Brut in Champagne. 

Tasting Notes:

We are so proud of this first vintage of our estate sparkling wine. The color is of a blanc de noir, with no hint of color from the Zinfandel grapes. Tiny delicate bubbles really lift out of the glass. The nose is full of pretty green apple, lemon oil, gardenia and white rose petal. The palate is honeyed with flavors of candied meyer lemon zest and tart apple. The palate is balanced but bright with beautiful fruit and great acidity. This is a super diverse wine, food-pairing wise and could go with briny oysters or even fried chicken.
