Cabernet Sauvignon, Pyramid Vineyard, Alexander Valley, 2018
Fruit from the Pyramid Vineyard in Alexander Valley was absolutely beautiful this vintage. It was hand-harvested in the early morning hours in mid-October and destemmed to a closed top tank. After over two weeks of fermentation, we pressed and put into a mix of new and used French oak barrels for almost 2 full years of aging before bottling.
This is such a beautiful example of an Alexander Valley Cabernet. The aromas are full of intense and concentrated black cherry, cassis, dried currants, all-spice and clove. The palate is beautiful, rich and just as intense. The flavors are of dark and brooding black fruits, slightly tart blackberries, silky but intense tannins and lots of spice notes and an undercurrent of earthiness and black tea leaves. This wine is delicious today and will continue to age well for at least another 8 years.
Cabernet Sauvignon is best paired with nearly all red meats, including prime rib, New York strip and fillet mignon. Also try lamb or pepper- crusted ahi tuna. This wine is best enjoyed with hearty foods and is great in sauces or reductions.
